Coming from a family of restaurateurs, he worked for four years in the R&D studio at Mugaritz, owned by Andoni Luis Aduriz. He currently runs the Franca restaurant alongside his partners, Gianmarco and Josh, where they serve traditional cuisine with a modern twist.Sessions
